Ingredients

1 Whole Leg of Lamb
1 tbsp Harissa Seasoning
1 tsp Garam Masala
1 tsp Paprika
1 tsp Salt
3 tbsp Olive Oil
6 Garlic Cloves
Fresh Rosemary
Fresh Coriander

Method :

1. In a bowl mix together the dry spices, olive oil and chopped coriander or mix in a pestle and mortar.

2. Pierce holes into the leg of lamb and rub in the marinade until evenly coated. Insert the cloves of garlic in the pieced holes to allow the flavours to infuse in the meat. Leave to marinate overnight for best results.

3. Top the lamb with rosemary and cover with parchment paper and then wrap in foil.

4. Bake in the oven at 180°c for 3-4 hours until tender and falling off the bone
