Peeling the layers of soft buttery Brioche Mocha Rolls is a great way to enjoy the mocha flavor.

Ingredients : Brioche Dough

3 cups all-purpose flour
3/4 teaspoon kosher or celtic salt
36 g sugar
4 g active dry yeast
3/4 to 1 cup of warm water
1/4 cup of milk
1 egg
3 tablespoons of butter, melted

Directions:

1. In a large bowl whisk together the flour, salt, yeast, and sugar. set aside.
2. In a medium bowl, add the eggs, milk, water, and melted butter. Whisk and set aside.
3. Pour the medium size bowl of the wet ingredients and pour into the dry ingredients. Stir with a spatula or a wooden spoon until your dough is shaped into a ball and is sticky to the touch.
4. Cover the bowl and allow it to rise in a warm room for the next 1 1/2 hours or until doubled in size.

Filling:

3/4 cup light brown sugar
3 tablespoons pure cocoa
1 ½ tablespoons ground cinnamon
1 tablespoon espresso instant coffee
¼ cup salted butter, room temperature

Frosting:
4 oz cream cheese,room temperature
3 tablespoons of butter, room temperature
¾ cup powdered sugar
½ teaspoon vanilla extract

In the bowl of an electric mixer, combine cream cheese, butter, powdered sugar and vanilla extract. Beat until smooth and fluffy. set aside.

Rolls Directions:
1. Place the dough to a well floured flat surface and roll out into a 14 x 9 inch rectangle. Butter 1/4 of the edges all around.

2. In a small bowl, mix together room temperature butter, brown sugar, cinnamon, cocoa and espresso coffee. Mix it with a spoon and then spread it with an offset spatula or the back of a spoon. Ensuring that it is all over the dough leaving a 1/4 with no spread.

3. Tightly roll dough up, starting from the 9-inch side and place seam side down.

4. Cut into 1 inch sections with a serrated knife or floss.

5. Place cinnamon mocha rolls in a greased 9 x 9 inch baking pan ,cake or spring form pan. Cover with plastic wrap or kitchen towel and allow it to rise again for 30-45 minutes.

6. Preheat the oven to 350 degrees F. Remove plastic wrap and bake cinnamon mocha rolls for 20-25 minutes or until just lightly golden brown . Allow them to cool for 10 minutes before frosting. Makes 8-10 cinnamon mocha rolls.

7. Spread the cream cheese frosting all over cinnamon mocha rolls and serve immediately. Enjoy.
