Shopping List:
3-4 lbs chicken wings
3-4 tbsps walkerswood jerk paste
4 green onions
1/2 yellow onion
1-2 scotch bonnet or habanero peppers
2-3 tbsps brown sugar
1/3 cup soy sauce
1/2 cup pineapple juice
1 tsp fresh thyme
2-3 cloves of garlic
1 tsp ginger
salt, pepper, garlic, onion powder, cinnamon
ground all-spice
2 limes

Sauce:
2 tbsps walkerswood
1-2 cups bbq sauce
1 tbsp ginger and garlic paste
lime juice

Pineapple Pico:
1 jalapeno
1/2 diced onion
1 cup diced pineapple
1/4 cup diced cilantro
1-2 limes
salt and pepper

  3. I made these this past weekend for my Caucasian friends who never had a taste of the Caribbean and they, WE ALL COULDNT STOP EATING AND LICKING OUR FINGERS!!!!!
    My parents are Trini but I always always always loved Jerk Chicken but never put the effort in to make it. THIS RIGHT HERE IS MY NEW DISH (sorry gotta steal) LoL 😆

  4. Matt!!! My husband made these and your homemade meatballs with blueberry preserve glaze recipe for our son's birthday party this weekend. 😮 They were AMAZING!!! EVERYONE ate them.   8. All you need is walkers wood. Everything else in this is just window dressing and fashion. A one hour indirect cook will achieve the results you want especially if you use pimento and oak wood for smokeI know twoJamaican restaurants that do it this way.
