These honey glazed carrots are elegant, delicious and very easy to make. We will be using baby carrots for this recipe. This is a great side dish for any celebration.

Serves four
24 baby carrots
1 TBS salted butter
1 TBS honey
1 TBS orange juice
1/4 tsp. orange zest

Bring a pot of salted water to a rolling boil and get a large bowl of iced water ready.

Wash your carrots and cut the stems leaving about an inch on each one. Peel them carefully.

Once the water is boiling add the carrots and cook for two minutes. Drain and immediately transfer the carrots to the bowl with iced water.

Melt the butter in a skillet and add the honey, orange juice and zest. Mix until the honey is melted. Drain the carrots and add them to the skillet. Stir occasionally until all the glaze is gone, making sure that all sides are covered.

Serve immediately and enjoy.

GORGEOUS!  Sometimes, I only find a few carrots in the fridge and I'm delighted to make this.  EVERYONE WILL EAT IT, at least a bit.  Even my late kitty cat liked this, for some reason!  Thank you so much for pointing out what "baby carrots" sold in bags generally are.  People are probably just better off buying the huge, dirty organic ones and peeling and cutting them down.  I like some ginger in these sweet carrots.  🙂

  4. Is it possible to serve it cold or I should make it just a few minutes before serving? Would it go nicely with a dressing or it doesn't need any? I am thinking to serve it to my guests as a separate side dish along with other vegetables (those with  a sauce to dipp them in). Regards from Poland:)

  5. Hey Frugal Chef, you said you'd peel them very carefully but I didn't see this in the video. Also, do you think I can use agave nectar with orange peel instead of honey?
