RECIPES IN THIS WEEKS VIDEO

Mediterranen Meatballs x lemon feta orzo

* 1 lb ground turkey
* 1/2 cup breadcrumbs
* 1/4 cup chopped fresh parsley
* 2 cloves garlic, minced
* 1 teaspoon fresh dill
* Feta crumble
* 1 egg
* Salt and pepper to taste
* Olive oil for cooking
Combine ground turkey with breadcrumbs, parsley, garlic, dill, egg, salt, and pepper. Shape the mixture into meatballs. Cook the meatballs in olive oil on stove top or in the oven on 350 degrees until browned and cooked through. Serve hot with the lemon feta orzo.

Greek Chicken bowls

* skinless chicken thighs
* 1 tablespoon olive oil
* 1 teaspoon dried oregano
* 1/2 teaspoon garlic powder
* Salt and pepper to taste
* 2 cups cooked rice
* 1 cup greek yogurt
* 1 cup cherry tomatoes, halved
* 1 cucumber, diced
* 1/4 cup red onion, thinly sliced
* 1/4 cup crumbled feta cheese
* Tzatziki sauce for serving

Mix olive oil, oregano, garlic powder, salt, and pepper, greek yogurt and coat chicken thighs with the mixture. Grill the chicken until cooked through, then slice. Divide cooked rice among serving bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
Serve with tzatziki sauce on the side

Greek Lemon Cod

* 4 cod fillets
* 1/4 cup avocado oil
* 2 teaspoons ghee
* 1 cup flour
* Juice of 1 lemon
* 2 cloves garlic, minced
* 1 teaspoon dried oregano
* Salt and pepper to taste
* Lemon slices for garnish
* Chopped fresh parsley for garnish

Whisk together avocado oil, ghee, lemon juice and garlic and set aside. Season your cod with oregano, cumin, coriander salt, and pepper. Place cod fillets in the avocado oil mixture then coat with flour. Place in a greased cast iron and brown on both sides. Place the cast iron in the oven and pour the lemon mixture over them.Bake until fish is cooked through and flakes easily. Garnish with chopped parsley before serving.

Chicken Gyro
* 2 boneless, skinless chicken breasts
* 1 tablespoon olive oil
* 1 cup greek yogurt
* 1 teaspoon dried oregano
* 1 teaspoon garlic powder
* Salt and pepper to taste
* Pita bread
* Tzatziki sauce
* Sliced tomatoes
* Sliced red onion

In a bowl, mix together olive oil, dried oregano, garlic powder, greek yogurt salt and pepper. Coat the chicken thighs with this mixture and marinate for at least 2 hours overnight is best. Heat a grill pan or skillet over medium-high heat. Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through. Let the chicken rest for a few minutes, then slice it into thin strips. Warm the pita bread in the oven or on the stovetop. Fill each pita with sliced chicken, tzatziki sauce, sliced tomatoes, and sliced red onion. Serve hot and enjoy your homemade chicken gyro!
