Good general rules but IMO the number one most common mistake is not enough salt and lime juice (not mentioned in the video).

Also I take exception to the recommendation to not overlook the cilantro stem. Cilantro-heavy recipes like this [Salsa Borracha](https://www.reddit.com/r/SalsaSnobs/comments/wjad4e/salsa_borracha_testing_out_chili_ancho_vs_negro/) and Indian cilantro chutney get downright bitter tasting if stems are used.
