In today’s video I walk you through one of my all time favorite fall comfort food dishes – butternut squash and sage gnocchi with sausage. This is one of the most warm and delicious recipes you can make in the fall.

Gnocchi:
6-8 Small/Medium Yukon Gold Potatoes
2 Fresh Eggs
1 Cup Pecorino Romano
1 Cup AP Flour, Mix, and add 1/2 Cup AP flour until dough not sticky

Butternut Squash Sauce:
8 Cups Rough Chopped butternut squash
1 diced white onion
3 Carrots
4 Stalks Celery
3 Garlic Cloves
1-2 Cups heavy cream
1 Package Boursin Cheese
