Ingredients
1 ½ Cups Self Raising flour (see below how to make self-raising flour)
1 Cup Sugar
2 Eggs
1 Teaspoon Bicarb of Soda
2 Tablespoons Butter/Margarine
2 Tablespoons Apricot jam
½ Cup Milk
1 Tablespoon white vinegar
¼ Teaspoon salt

Method:
Dissolve the bicarbonate of soda in the milk and then add the vinegar, this creates a substitute buttermilk.
Mix all the other ingredients into the milk until well incorporated.
Bake for 30 minutes at 200’C (390’F)

SYRUP
1 Cup Boiling Water
2 Tablespoons Butter/Margarine
1 Cup Cream
1 Cup Sugar
1 Teaspoon Vanilla Essence

Method:
Mix all the syrup ingredients together and bring to a slow boil and pour hot over the pudding as soon as removed from the oven and let stand until the pudding has absorbed all the syrup. Serve with custard or ice cream.

  1. A question, please. If you start with 1 cup of milk and then add baking soda, etc to make it a buttermilk substitute, can you simply begin with 1 cup of real buttermilk? Thank you.
