This recipe is what I believe something called “chili garlic noodles” should be. In Thailand we have a dish where spaghetti noodles are stir fried with garlic, dried chilies and Thai basil…which actually sounds much better than it is. SO I decided to take that flavour combination and create a version that I think this dish should be.

The result turned out fantastic! Al dente noodles coated in a super umami sauce, loaded with smoky dried chilies and lots of garlic, with anchovies for depth and a touch of Thai basil for freshness.

  2. This lady is the best. I've tried many of her recipes and have never been disappointed. Thanks for all your terrific recipes and "how to" videos:) I did not have anchovies so I used shrimp paste instead and got an excellent result. You can find it at your local International store.

  3. I did it with Anchovies. I regret it lol I don't like the smell/texture it gave the noodles. The tastes is okay but I think fish/soy sauce would be better. Thanks for the recipe though!

  4. I have often eaten pasta with seasoning as a quick dinner. Usually it's either pasta with seasoning salt (weird I know) or with garlic, onion and olive oil…but this dish could become my favorite go to. Spicy, aromatic…just plain yummy.

  5. I love anchovies, I always use twice as much as recommended (and eat the rest !) by the way, stuff Audible !

  6. Love these recipes, so inspiring! Tried subbing capers for the anchovies (hard no for me, ditto for bacon) and worked out fine I think. Also was able to find vegetarian oyster sauce in an Asian grocery. Super fast and delicious.

  7. Made this today along side a salmon filet. Phenomenal! Didn’t have a few of the ingredients so I used Worcestershire instead of anchovies, regular basil, and chili powder. Still amazing.

  8. I'm not familiar with buying anchovies espwcially for this dish. Are they really salty? Can someone shed light on this? Canned anchovies in oil?

  9. Where do Shiratake Noodles sit in Thai cuisine? I made this with them and the result was very enjoyable although not as good as Linguine. Trouble is everthing that's delicious always goes with some sort of starch/carbs but these noodles go some way to offset the guilt.

  12. If you do not like canned sardines do not make this dish. The canned sardine taste ruins the dish. The butter also gives it a weird flavor. Just to make sure I was not being to quick to judge, I ate an adult portion. It did not work for me but I am glad I tried it.

I didn't have dried chilli's so I used chilli oil, I couldn't find whole anchovies at the local grocer so I used anchovy paste, I don't have Thai basil so I used genovese basil … the only ingredients I had in abundance were garlic and oyster sauce … despite all the substitutions it was delicious.

  15. i got tired of eating puttanesca so i tried this today. thai basil is a nice addition. perhaps adding caper or pecorino cheese will add nice tang.

  18. My mom used to say I had an “iron stomach” … 1st because I could eat pretty much anything and I loved spicy e.g. garlic, chilis, peppers, etc.. 2nd I also let immature drama roll off my back 🤣. I took a 9 month cooking class in 7th grade and have cooked from scratch since!!! Love your channel and have been subscribed for a while now! 👍✌️🙏😀
