2 medium large eggplants
2 large eggs + 2 tablespoons milk or water beaten
2 cups seasoned bread crumbs
4-10 tablespoons of Olive Oil (used to fry the eggplant)
1½ cups Parmigiano cheese
48 oz. tomato sauce (6 cups)
1 pound browned ground beef (optional)
2 cups whole milk shredded Mozzarella cheese
Salt & Pepper to taste

Yes, eggplant prepared specifically this way is delicious.
There used to be a great Italian restaurant near me, their signature appetizer was a single piece of slice eggplant.
It was sliced length wise. Then breaded and fried, like yours. It was served like a piece of chicken parm with a slice of melted cheese on top and a spoonful of tomato sauce on top.
It was addicting.
I’ve never cooked or ate eggplant before so of course I’ll be trying this very soon! Thank you both for sharing.
