Ezogelin soup (Ezogelin çorbası) is a traditional soup of Turkish cuisine made from red lentils. Ezogelin Soup, also known as “Bride’s Soup”, is a lentil soup that is very popular in the Middle East due to its simplicity in preparation and delicious taste. The main ingredients are red lentils, onions, garlic and spices, and some recipes use rice. Ezogelin soup is usually served hot, garnished with a slice of lemon and sprinkled with mint, paprika or sumac. This is a very nutritious soup with a rich and aromatic taste, which makes it an excellent choice for those who want to try something new and delicious.

Cooking time: 40 minutes
Servings: 4

Ingredients:
170 g of red lentils
4-5 potatoes
1 carrot
1 onion
1-2 cloves of garlic
1 1/2 tbsp olive oil
1 1/2 tsp salt
1/2 tsp black pepper
1/4 tsp chili

• a saucepan
• blender
• cutting board

📙 Cooking:
1. Rinse the red lentils in cold water and drain.
2. Finely chop the onion and grate the carrots.
3. Heat the vegetable oil in a saucepan. Fry the chopped onions and carrots over medium heat for 3 minutes.
4. Add garlic, sweet paprika, chili flakes and ground black pepper. Fry for 3 minutes.
5. Add the washed lentils to the pan. Pour in hot water, bring to a boil, then reduce the heat to low and cook under the lid for 30 minutes, stirring occasionally so as not to burn.
6. Add salt to taste, add lemon juice and cook for another minute.
7. Turn off the heat and let the soup cool down a little. Whisk it with a blender or, if desired, leave it without whipping. If necessary, add more water and simmer until a less thick consistency is obtained.
8. Serve the Turkish Ezogelin soup hot, garnished with fresh herbs, sweet paprika and dried mint. Add lemon juice to taste.

Tips:
1. For a richer taste, replace the water with broth.
2. Add salt and spices to taste, you can also add thyme and sumac.
3. If the soup is too thick, add more water and simmer for two minutes.
4. Lemon juice can be added gradually if not everyone likes the sour taste of soups.
