As I was prepping dinner for my family, I decided to grab my camera and share the delicious results with you.
This video is short and this dinner is almost as quick! You can switch out any of the vegetables and spices for your own favourite flavors but this combination gave this one-pan-wonder its characteristically warming Middle Eastern palate.

Ingredients
Salmon filet
1 can of chickpeas
Packet of Israeli couscous
Small can of tomato concentrate
Punnet of mushrooms
1 bell pepper
2 lemons
1 tomato (you can add more)
Garlic salt, pepper, Ajika spices,
Dash of hot sauce
Fresh sage & basil
Method
Add a thin layer of olive oil to a baking pan. Combine check peas and couscous, add a little hot water. Loosen up tomato paste in a bowl with some (warm) water and add it to the pan. Mix in salt, pepper, spices & hot sauce. Slice mushrooms, tomato and bell peppers & layer in pan as a ‘bed’ for the salmon. Add half of your lemon slices. Place salmon filet on top & garnish with spices and remainder of lemon. Add herbs & bake 25-30 min. at 400F. Remove from oven & add boiling water to create more sauce if desired. Garish with additional fresh herbs & serve.
