I just got back from my first trip to Japan, and was absolutely blown away by nearly everything I experienced. However. One seemingly throw away pickle dish I had at 3 different Izakyas really stuck me with and I was hoping to be able to find it back here in the USA or at least something comparable. The only thing I ever saw it called was Mountain Jellyfish. It was the perfect pickle snack and I'm already missing it!

    It’s a mountain vegetable called either yamakurage or kuki (stem) lettuce. It can be bought in packages already prepared. You can probably find it online.
