Cottage cheese is good to add as well. Makes them have a unique texture and a tangy flavor.

I use a egg for my potatoes to get that fluffiness not mayo as it alters the taste. Key is to blend egg in while steaming hot so it will cook the egg as you blend it. My grandmother done this as long as I could remember.
