LEMON GARLIC PASTA / FAST and EASY

Ingredients:

8 ounces of pasta (linguine or spaghetti works well)
4 cloves of garlic, minced
Zest of 1 lemon
Juice of 1 lemon
1/4 cup of olive oil
Salt and pepper to taste
Grated Parmesan cheese (optional)
Fresh parsley, chopped (optional)
Instructions:

Cook the pasta according to package instructions until it’s al dente. Drain and set aside, reserving some pasta water.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, but be careful not to brown it.

Add the lemon zest and lemon juice to the skillet, stirring to combine. Let it simmer for another minute.

Toss the cooked pasta into the skillet with the lemon garlic sauce. If the sauce is too thick, add a splash of pasta water to loosen it up.

Season the pasta with salt and pepper to taste. You can also sprinkle some grated Parmesan cheese and chopped parsley over the top for extra flavor.

Serve the lemon garlic pasta hot and enjoy!
