A gorgeous egg salad that’s perfect for the picnic basket, lunch date, or anytime you’re craving something tasty! :egg: :sandwich: Ingredients 4 large eggs 2 tablespoons lemon juice 1 tablespoon mayonnaise 1 tablespoon finely chopped fresh chives 1 tablespoon chopped fresh dill 1 tablespoon freshly grated parmesan cheese 1 lemon, zested ½ tablespoon whole grain mustard hot sauce, to taste celery salt, to taste freshly ground black pepper, to taste 2 slices white bread potato chip, to taste 1. Bring a small pot of water to a rolling boil. Gently drop the eggs into the boiling water and boil for 7 minutes, or until soft boiled. 2. Immediately plunge the eggs into an ice bath for 1-2 minutes. 3. Remove the eggs from the ice bath, remove the egg shells, and roughly chop the eggs. 4. In a medium bowl, add the chopped eggs, lemon juice, mayo, chives, dill, Parmesan, lemon zest, mustard, hot sauce, celery salt, and pepper. Mix until well combined; taste for seasoning. 5. Spread the egg salad over a bread slice, top with the potato chips, and sandwich together with the remaining bread slice. 6. Enjoy!

  1. Salt and vinegar or dill pickle chips are the best on sandwiches! Of course I don’t live in Canada so I’ve never tried the catchup ones but I would love to.

  2. How does no one not seem to do any recipes involving salad cream?! It is literally the best thing to put with boiled eggs!
