EFFORT to get it right. So I’ve created this quick, easy and tasty ‘risotto’ that doesn’t take an age to cook, but still gives you that creamy satisfying texture reminiscent from a regular risotto. The secret? Well you’ll have to watch the video won’t you!

To make my cheats risotto you will need:
Feeds 3 with sides
►200g of chorizo
►1/2 large leek
►600ml chicken stock
►250g or orzo pasta
►250ml of white wine
►60g of grated parmesan plus extra for garnish
►2 garlic cloves
►Juice of half a lemon plus zest for garnish
►3-4 knobs of butter (about 25g)
►Salt & pepper
►1+1/2 tbsp rapeseed or olive oil
►4-6 basil leaves
Serve on it’s own or with salad/garlic bread

  3. We call that pasta risoni and very popular with the Greeks. I never ever thought of using risoni instead of Arborio rice. I have always had a problem cleaning leeks so that is a very good and easy way of dealing with the dirt. That is a very good easy recipe – sorry you are not in the pink

  5. Feeling ya Adam….have had to take 3 days off work for the very symptoms you are mentioning….I hope yours dosn't take a turn for the worse…plenty of lemon tea; vicks and throat lozenges do the trick…oh and bed rest for sure sleep sleep & more sleep😴

  9. You could so vary that bad boy! Swap chorizo for mushrooms (great if veggie). Swap leeks for onions. Add spinach or frozen peas near the end…

  11. Oh another banging recipe, thanks Adam. I've never even heard of orzo but do like making Risotto. This looks a lot less work and much less stirring, I'll give it a go.

  12. I get so cross when I see what supermarkets sell what they call leeks! They sell half the plant, probably because so many people don't what to do with a leek! How much tasty leek is wasted? 😡

  13. I have eaten Risotto but I thought I had cooked it wrongly cos the rice was sloppy. I have since learned that Risotto rice IS sloppy and I don't like sloppy rice so I don't eat it.
    HOWEVER this looks NOT sloppy and even if it was a bit wet it is Pasta and I have some Orzo so for me this is a 'must try'. AND I can make a single portion easily. Thank you.
