I found this recipe for green enchilada pork which looks tasty. Any suggestions for what to serve with this? (Also feel free to suggest additional ingredients to add)

Refried beans and rice?

After it’s cooked, some people shred the pork into the juice and use the shredded meat for tacos, enchiladas, quesadillas, and nachos. You could make your own Chipotle style bowl with rice, beans, meat, and toppings.
Add cumin, chili powder, garlic, chopped onions, black pepper, and/or finely chopped jalapeños.
You could also make it creamy. After it’s cooked and shredded, drain off most of the remaining liquid and add sour cream, cream cheese, crema Mexicana, etc.
Rice and beans would be good sides, as would esquites (which is very tasty and easy to make with frozen corn).

I would shred it and serve it in flour tortillas. If you’re serving this to multiple people for a dinner I would set up a little toppings bar with salsa, sour cream, green onions, red onions, diced tomatoes, cilantro if you like it, shredded cheese, pickled jalepenos, avocados, whatever you like!
If you want a side dish with that, maybe something like [Cliantro Lime Black Beans and Rice](https://juliasalbum.com/cilantro-lime-black-bean-rice/). I haven’t made this recipe so I can’t vouch for it. Or you could do roasted sweet potatoes. Either spicy like [this](https://www.retrorecipebox.com/spicy-roasted-sweet-potatoes/#recipe) or with just a little salt pepper and oil, depending on how spicy your main dish comes out. You don’t want everything on the table burning your mouth off, and I think sweet potatoes are a nice compliment to spicy food just the way they are.
