Another great source for inexpensive chicken is to use chicken backs. A few of these in add a lot of flavour to the stock.

I don't remember when I diacovered Matzoh Ball Soup, but I was probably 12ish. We had a great Deli in town and my Mom took me there over the years. My love of the dish prompted me to branch out to other restaurants. Some had flavorless broth, others had noodles, but all had baseball-sized balls! I like JP's approach. Make them smaller and add flavor! Great job Chef!
I had to look up "matzo meal" to find out what it is! It sounds like ship's biscuit, pounded into meal. Or just coarse cracker crumbs. Adding in the eggs, herbs, dill, garlic, parsley, butter… now we're talkin'! Or, for a dramatic departure, leave out the butter, dredge some oysters (or almost any protein) in this stuff, and fry in clarified butter, and soon you will be in Maillard Heaven!
