Ingredients List:

2 small heads lettuce
β…“ Carrots sliced
2-3 Celery stalks chopped
6 Cherry Tomatoes
2-tbsp Buffalo Sauce
2-3 tbsp Ranch
ΒΌ cup Blue cheese crumbles
1-2 Boneless, skinless chicken breasts
1 cup Panko crumbs
1 Egg wash
Β½ cup Flour
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp ground mustard
1 tsp black pepper
1 tsp Chicken rub
Avocado Oil cooking spray

Instructions:

Step 1: Chicken Prep

– slice Chicken breast in half through the middle.

– in a small dish mix 1 tsp garlic powder, 1 tsp onion powder. 1 tsp paprika, 1 tsp ground mustard, 1 tsp black pepper, & 1 tsp Chicken rub together until well combined.

Season chicken with seasoning mix on both sides.

Step 2: Dredge

– set up 3 stage dredging station (Β½ cup flour, 1 egg beaten for wash, & 1 cup panko breadcrumbs. Add remaining seasoning mix to flour and mix to combine.

– Dredging each piece of chicken in flour 1st, 2nd egg wash, & 3rd panko until well coated.

– add chicken to 375 degree air fryer and cook on each side for 10 mins or until your chicken reaches an internal temp of 165. Remove from air fryer once complete. Let rest for 2-3 mins before slicing into strips. Set aside

Step 3: Salad toppings

– while chicken is cooking, chop celery, turkey bacon, cherry tomatoes, & carrots. Wash 2 small heads of lettuce & cut ends off. Chop lettuce into 1-Β½ half inch pieces. Set aside until chicken is done.

Step 4: Assembly

– on a plate or salad bowl, add lettuce. Add carrots, celery, and tomatoes in individual piles around lettuce. Sprinkle turkey bacon & blue cheese crumbles on top. Drizzle salad with 2-3 tbsp each of Buffalo Sauce & ranch dressing.

  2. You just popped up and I love this! I actually thought you were going to be making like a mayonnaise chicken salad but this is fine and it could be used in my type also! I recently became good with spicier food because I have been very unfortunately living without AC in South Florida for a year and a half now and it's been horrific and caused me to crave spicier food! And usually was a stomach problem but it seems to be much better maybe the more spicy I eat??? I've learned about certain peppers and chili crunchy chili sauce I mean oil and a whole bunch of things and I also got sliced buffalo chicken from the grocery and I really loved it! Thank you and I'll be watching πŸ₯°πŸ₯Ή
