This was my first proposition at my new job, I’m a pâtissier and we were having guests with some serious restrictions (no lactose, no gluten, vegan etc) so I just prepped a new dessert that would fit everyone’s special criteria.

There’s : a silky vanilla coconut cream (think light, crème anglaise-like texture),

a coconut salted caramel,

pieces of quince poached in a vanilla/lemon light syrup,

an oat/coconut/hazelnut crumble (coconut cream as binder),

oven-baked crispy quince tuiles,

and a vanilla gel.

Not pictured is a jelly (agar) made from the reduced poaching liquid, it was still chilling at the time of the pic but i added it underneath the quince at the very bottom of the plate.

Overall I think it’s a little too monochromatic but not that bad for something I had to come up with in a few hours with available limited ingredients ! Please lmk what you think:)
