Cajun Shrimp Fish Rice Skillet Dinner Recipe

INGREDIENTS:
1 pound cooked shrimp
1 pound steelhead trout /cod/haddock/tilapia
1 small diced onion
2 stalks diced celery
1 diced red bell pepper
5 cloves minced garlic
1 1/2 cups rinsed and drained long grain rice
1 – 14.5oz can diced tomatoes with juice
1 cup clam juice
1 1/2 cups chicken broth
1/4 tsp. black pepper
1 Tbsp. Cajun seasoning
2 tsp. Old Bay seasoning
1 tsp. parsley
1 tsp. oregano
3 Tbsp. butter

In a skillet on medium heat add butter, onions, celery, salt and black pepper.
Cook and stir for 3-4 minutes or until the onions soften.
Add bell pepper and garlic. Cook and stir for 1 minute.

Add rice. Cook and stir for 2-3 minutes.
Add tomatoes and stir.
Add clam juice and broth. Stir. Turn heat up to bring to simmer.

Add spices, fish and shrimp. Stir and bring to simmer.
Cover tightly and lower heat to low setting. Cook for 20 minutes.
Turn off heat and let rest for 10-15 more minutes. Do not lift lid.

Remove lid and garnish.
Serve and enjoy.

Check Out Those Thighs! | Chicken & Mushroom Wild Rice Skillet Dinner

INGREDIENTS:
5-6 bone in skin on chicken thighs- cleaned and seasoned with salt & pepper
1 medium diced onion
2 stalks diced celery
1 8oz. packed diced mushrooms
3 cloves minced garlic
1 package long grain & wild rice mix
2 cups chicken broth
1 can cream of chicken
1/4 cup fresh chopped parsley
salt and black pepper
2-3 Tbsp. oil

In an oven proof skillet on medium high heat add oil and place chicken skin side
down. Season both sides with salt and pepper.
Cook for 3-4 minutes or until skin is golden brown and then flip.
Cook for an additional 1-2 minutes and then remove from the pan.

On med heat add onions and celery. Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for another 3-4 minutes.
Add garlic, stir and cook for 30 seconds.
Add rice. Cook and stir for 1 minute.

Add broth and stir to incorporate.
Add seasoning packet, fresh parsley and any other herbs.
Add cream of chicken and stir to incorporate. Bring to simmer and turn off heat.
Place chicken skin side up and all the juices.
Cover tightly and bake at 400 degrees for 30 minutes.
Remove from oven and do not take off the lid. Let rest another 15 minutes.

Serve and enjoy.
