I made some turkey taco bowls for lunch this week!
Only two of them have avocado because I’m waiting to cut up the other ones so it doesn’t get all brown and icky. I’ve calculated that these are around ~450 calories each and roughly 20 g of protein!

For the recipe….
– 1 lb of ground Turkey – 8 oz of tomato paste – 2 tbsp of taco seasoning – 1 cup of jasmine rice – 1 can of corn – Half of a red onion – cilantro – 3 gloves or garlic – 2 avocados
So, I got my cup of rice cooking according to the bag. Then I cooked up the ground Turkey and then drained off the water/fat. Then I added the tomato paste and taco seasoning. Both were done around the same time and I let them cool. I chopped up my cilantro and garlic, and I also diced my avocado and red onion, and got my corn drained and ready. Then I arranged everything like you see here. I did end up frying the onion in the same pan I made my turkey in afterwards, but it was a last minute decision. Let me know if you have any questions.
