    I don’t know if you bought a t-bone and cut off the filet but special commendation to you if you did. It’s two different steaks that need to be cut two different ways. If I ever end up with one the strip is for tonight and the filet gets dry brined for tomorrow.

    imho you’re missing a sear and have that big chunk of fat. With that cut i’d use a hotter pan to get a good sear on each side and then use tongs to put it up on the bone to bring it up to temperature and on the other fat side to render that down.

    You’ll end up with crust, flavor from the bone and that intermuscular fat won’t be so chewy if you eat it.

    Supermarkets in NL are ripping you off with shit-steak. Buy at the butcher, be it live or offline. Keep your head out for discounts and it is cheaper than shitty supermarket steak.
