  1. I could see myself doing something like this but going half potatoes half cauliflower, like I do with rice sometimes. Still keeps the flavor but also you get some of the benefit of the cauliflower swap.

  2. use onion powder, garlic powder and olive oil when roasting them in the oven.
    After they are done roasting add Boursin cheese or cream cheese and blend.

  3. I'm a big fan of a half cauliflower, half potato mash with a bit of garlic and lots of butter. Bonus points for using confit garlic. The recipe I used said it was a "healthier" version of mashed potatoes which I'm not so sure about, but it was definitely delicious!

  4. So the trick with cauliflower? Microwave it briefly and squeeze the water out. Then cook it however you want. Otherwise it’s lame and soupy.

  9. The thing about substituting food to make things seemingly 'healthier' in some way, is that you can't substitute more than one thing. Subbing cauliflower for potato or rice is a common low carb swap. If you're trying to replace the carbs in a food, you cannot replace the fat too! Otherwise it's really turning into a totally different dish of its own at that point. I have had good mashed cauliflower, and it's because it was loaded up with real butter, half and half, and the secret ingredient of cream cheese (which is also extra delicious in real mashed potatoes, btw!)

  10. Potatos aren't bad for you. Too many people think carbs are evil. Carbs have their place in a well-balanced diet, and punishing yourself with half-assed replacements is just going to leave you hungry and discontent.

    Have the potato. It's fine.

  11. If you're gonna sub potatoes, at least have the decency to do something meant for mashing. Like turnips, rutabaga, parsnips, even carrots!
