1 pack boiled chickpeas (400 g)
1 garlic clove
½ lemon juice
3 ice cubes
3 tablespoons tahini
½ teaspoon salt
2-3 tablespoons olive oil

Topping:
1 pinch of cumin
1 pinch of sumac
2-3 sprigs parsley
1 tablespoon olive oil

– For a perfectly smooth hummus first you need to peel the chickpeas. Add 400 gr canned chickpeas in a large bowl and rub to take the skin of. Fill the bowl with water and the skins will start to float. When you drain, skins will group on water and it will be much easier to collect. (Skip this step if you really need to do the recipe in 5 minutes)
– Add chickpeas, garlic, salt, tahini and olive oil to the food processor.
– Squeeze lemon juice and run for at a low-medium speed.
– While the food processor is working the hummus will get warm. To avoid that add ice gradually. Ice will help to make a smooth hummus as well.
– After a couple of minutes the hummus will be okay but not smooth enough. Don’t give up and continue until the hummus is creamy. You can run at high speed at this stage.
– Taste and adjust the lemon, tahini and salt to your taste. Garlic and olive oil always need time to settle. If you have 2-3 hours before eating, the taste will be better.
– When the hummus is ready, put it on the serving table and make a little crater with the back of a spoon.
– Sprinkle ground sumac, cumin and parsley leaves. Last but not least, pour 2-3 tablespoons of extra virgin olive oil.
– Enjoy your creamy, tasty, simple hummus with your lavash or chips as your spoon!

  4. This should be called a cardio hummus! Usually I blend it for good 8-10 min though and regularly check how thick it is before adding ice water so that it doesn’t turn out watery. Hope this video was done in one go ! Thanks

  8. Strange how people are tapping into the quick pace and not understanding the message at hand. It’s simply to illustrate how quick hummus is to make. However, I doubt when she generally makes it she goes around at that pace nor does she expect you to either. You could take 7 or 10 minutes but mentally you will know it is not labour intensive and that is what will make us all most likely to make hummus if you’ve not made it!!! Secure in the knowledge hummus (if spelt right)is quick to make generally. Try to appreciate what she’s saying not taking it literally. Understand the real message in hand she’s conveying not for you all to run around the kitchen. I loved this video and her lovely energy. We used to have a programme in the YK where chiefs were under the clock to finish a recipe in a certain time was fun to watch. The programme was to see can certain recipes actually be done properly within a certain time and to encourage people to cook more knowing it’s not as hard or takes long as you think!❤

  14. I'm lebanese, I make hummus all the time…..never takes me more than 5 minutes and I don't need to race around. What the heck! And DON'T make a large batch…..the garlic gets stronger the longer it sits and gets harsh. She's right about the tahini, best you can find makes a difference.

  15. As a few commentators have said: I'm not a big fan of the "such-and-such recipe in under xx mins" format. Do your thing, but don't make these weird challenges (unless you want to frame them in a certain context, like "Imagine you've got unexpected guests over for dinner but didn't have time to cook a full meal, go with meze").

    This video's format is awkward and you look uncomfortable doing it.

    I usually take a bunch of garlic cloves, drizzle them very lightly in olive oil and then roast them skin on (effectively caramelizing them) in my airfryer while I do the other stuff. The caramelized garlic gives the hummus another level of flavour while mellowing out the pungency of any stronger cloves. If you want it raw, you can always slice it in half, length-wise, and remove the garlic germ (or "anima" as Italians call it) which is what really adds pungency and causes heartburn.

    Word of warning: throwing ice in a food processor is not for every food processor. Some blades will get damaged by the hardness of the ice, so this recipe only works for quality food processors.

This fast video may be very inspiring to some, but I would love to see a video where you and 1-2 others in your crew work together in the kitchen to set up a meal together without rushing.
