My wife is a vegetarian, but since I got into sou vide she’s been feeling left out. We wanted to celebrate closing on our house, so She got me a nice New York strip and saw this at the store. I want to try and sou vide it, but I don’t know what will happen to it. Does anyone have any experience?

It looks absolutely vile to me, but I’m not eating it. I just don’t want to ruin it.

    You probably could, although I would probably try some googling to try to get an idea about time/temperature. If you choose to go this route, you will want to repackage the ‘meat’ because the seal might not withstand the water temp.

    One thought – I’d be worried about the texture if you went the sous vide route. The proteins in animal meat are strong enough to slowly break down over time during the sous vide process (and thus tenderize the meat), but I’m not sure how vegetable proteins would withstand the same treatment. I’d probably hit this one with a hot sear to generate a crust and save the sous vide for real steaks!

    No.
    It’s not meat and it is fully cooked already. This needs just a good sear and it is ready. Think of it as “already sous vide”.
    Putting it in a water bath will just make it fall apart and the oil inside which is suppose to be like “fat” will be forced out.

  12. Reading their website it says to not marinate for more than two hours. I think sou vide may cause it to fall apart. Maybe try it another time. But just grill it this time.

    I don’t think that would turn out well. To let your wife try sous-vide you could cook some veggies (honey glazed carrots, asparagus,..), eggs or desserts (crème brûlée) for instance

    The bigger question is if it is edible? I can sous vide my shoe, doesn’t mean I want to eat it.

    My wife was pescatarian until the day I barbecued a nice filet rare. She decided she wanted to try a bite and devoured it. Maybe sub whatever that thing is with a real steak and just show her the package🤣. Just kidding, a steak is not worth your marriage….

    But seriously, the mushroom based stuff is usually pretty good. I would fry it in a hot pan with some olive oil or go even hotter and blacken it. A bit of crust make them taste pretty good

    (Upon further reflection)
    If the package is frozen it might be good to defrost in the souse vide around 125 then toss it in a hot pan. The trick will be pulling from the souse vide before the form breaks down.

    My favorite non meat things in the souse vide:
    Chocolate Pot de cream, carrots with brown sugar and cinnamon, crème brûlée, scrambled eggs (especially if you need to to a lot), spinach, broccolini, and squash. There are lots of ways to be inclusive. Unfortunately most veggies need a higher temp than what you use with steak.
