Tamarind Pop-Tarts (Remix to a classic!)
Talk about an updated classic! This Tamarind Pop-Tart is what I was craving over the weekend. The taste of tamarind and pineapple together is magic. Would you try this?

Filling Ingredients:
1/2 cup of date syrup
1 cup of Tamarind juice (5 – 10 tamarind pods depending on the size + 2 cups of water) See steps to make tamarind water in the directions)
2 cups of chopped pineapple
1/4 cup of tapioca starch mixed with 2 Tbsp of water
1 tsp orange extract (optional)

Other Ingredients:
Pie Crust
Orange Zest
Icing

Step 1. Remove the tamarind from the pod and place it in hot water for 25 minutes. Then, use a fork to mash the tamarind in the water, strain it, and put it on the side. Make sure to get all the pulp.
Step 2. Add 1 cup of tamarind juice, chopped pineapple, date syrup, and orange extract to the blender. Blend until you have a smooth texture.
Step 3. Add tamarind blend to a saucepan and cook for about 10 minutes; it’s time to add liquid tapioca. Make sure that the tapioca is mixed well with water before adding. Cook until the filling becomes thicker. Place in the refrigerator for about 1 hour before adding to the crust.
Step 4. Add mix to the pie crust and seal the top with a fork and water in between the pie crust.
Bake, add ice and enjoy!

How do you feel about Tamarind?

tamon is one of my favorite fruits I
remember being a young kid and chasing
down an ice cream truck so we could buy
some candy that had like the sweet and
sour Tangy Vibes let’s make a Tamarind
poptart it’s always fun to recreate
dishes that you used to enjoy but in a
different way I used to tear Pop-Tarts
up with icing no icing cold hot broken
it didn’t matter so for me to be able to
create a poptart with Tamarind filling
pineapple icing and lemon and lime zest
some of y’all may be tired of me saying
this but what else can I say a straight
fire

  1. My son use to always request for pop tarts, and my response would be "theres too much processed sugar in it!" ….now i have no reason, I'll definitely make this for him this weekend…now to find Tamarind 😅

  2. Damn such a good idea. I would do a tamarind raspberry mix perhaps, lime icing? Or damn imagine a passion fruit pop tart 😋
