today we are going to make very easy and
tasty beef and broccoli the key to this
dish is to marinate the beef and make it
very tender and juicy you can also use
the same marinade for a lot of other
dishes too I’m going to show you how to
do that let’s dive in I’m using an eye
of round roast this is a pretty Lan cut
but there’s a still tiny bit of fat so
I’m going to get rid of that first you
can use any cut that you like the
marinade is going to make it very juicy
in a tender so don’t break your bank to
slice the meat there are a couple of
Tricks always cut across the grin to
break the muscle fiber otherwise the
beef will be very chewy the second don’t
cut the meat too thin or it will break
up in small pieces when you stir fry we
want to make sure there’s enough time
for the meat to be cooked
properly once the meat is cut up clean
them in the water for a couple of times
then squeeze the water out set it aside
now we’re going to start the key step
marinate one teaspoon of
salt 2 tbspoon light soy sauce 1 tbsp
dark soy sauce 1 tbsp oresto sauce 1
tbsp Chinese cooking wine freshly
grounded
pepper a pinch of sugar to balance the
flavor lastly 1 tbsp water I’m not going
to use baking soda water is going to
help to tenderize the beef gently
massage the beef for about 1 minute you
will notice all the liquid is gone
they’re all absorbed by the beef this is
the key trick to tenderize the
beef next to add the corn starch mix
well lastly to pour in some oil this
helps to lock the juice always do this
as a last step of marinate or the oil is
going to prevent the beef from absorbing
all the other tastes now let’s work on
the broccoli cut the broccoli into bite
size scissors can be a really good tool
for this task no matter what tool you
prefer to use the key is to work on the
stem instead of the crown so you have
less
mess for this recipe we’re also going to
chop some
garlic please don’t skip does a step
because a garlic really enhance the
flavor of a
broccoli next chop some
ginger let’s make the sauce Now 1 tbsp
light soy sauce half tbspoon oyster
sauce half tbspoon dark soy sauce a
pinch of a
sugar one spoon corn starch one spoon
water mix it well if you prefer your
dish to be a little bit more Saucy add
one more spoon of
water we’re going to blench the broccoli
next in the boiling water adding oil
salt then
broccoli this helps the broccoli to stay
fresh and
green drain the water in 2
minutes now let’s cook the meat
in the hot pan adding cold oil then
adding the beef immediately quickly
break up the meat since we use the corn
starch it might be sticky to the bottom
so make sure to do this as fast as
possible stir fry about a 40
seconds when the beef still shows a
little bit pink then add in the garlic
and the
ginger another quick stir fry to get the
aroma
[Music]
out turn the heat to low then pour in
the
sauce quickly stir the meat to coat it
with the sauce then add in the
broccoli once the broccoli is in turn
the heater back to
medium quick stir
fry this easy and tasty broccoli beef is
ready I hope you enjoy this video and
the recipe I’ll see you next time
