Ingredients:
1 package It’s Skinny Angel Hair
1 eggplant, cut into 6-8 slices
1 cup flour
1 egg, beaten
1 cup seasoned panko breadcrumbs
1 tbsp salt
1/2 cup olive oil
1-2 tbsp pasta sauce per slice of eggplant
1 tbsp shredded mozzarella cheese per slice of eggplant
1 cup of tomato/pasta sauce
Parmesan cheese for garnish

Directions:
1 – Cut the eggplant into 6-8 slices, about 1/2 inch thick. Season the eggplant slices with salt and let them sit for about 30-60 minutes to draw out moisture. Pat the eggplant slices dry with a paper towel before breading.

2 – Prepare your breading with 1 cup of flour, 1 beaten egg, and 1 cup seasoned panko breadcrumbs each in a separate bowl. Dip each slice of eggplant in the flour (shake off the excess), then dip into the egg and coat with panko breadcrumbs. Repeat until all eggplant slices are breaded.

3 – Heat 1/2 cup of olive oil in a skillet over medium-high heat. Fry the eggplant slices in the hit oil for about 3 minutes per side until the breading is crispy and golden brown. Transfer the fried eggplant slices to an oven-safe skillet.

4 – Top each slice with 1 tablespoon of pasta sauce and 1 tablespoon of shredded Mozzarella cheese. Bake the eggplant parmesan in a preheated 425-degree oven for about 30 minutes, then broil for the last 2-3 minutes until the cheese is golden-brown and gooey.

5 – Heat about 1 cup of your favorite pasta sauce in a skillet over medium-high heat. Add 1 package of drained and rinsed It’s Skinny Angel Hair pasta and toss to combine. Add grated parmesan cheese and heat for about 3 minutes.

6 – Dish up Angel Hair pasta and sauce on a plate, top with 2-3 slices of eggplant parmesan, extra parmesan cheese for garnish, and dig in!

Eggplant Parmesan – one of my favorites. All 
right, we’re going to use It’s Skinny angel hair.  
And you only need a few ingredients for this, 
eggplant being the main one. Cut it, salt it,  
let it sit for a half an hour to an hour. Then 
you’re going to take your pieces, put them in  
flour, shake them off. Then you put them in egg 
– I use one egg for this. And then shake it off,  
and then panko breadcrumbs. I’m using already 
seasoned, okay? And so just repeat, just keep  
on going. As many as you want. And so once we get 
them all breaded, we’re going to put about a half  
a cup of olive oil in a pan, and we’re going to 
fry them until golden brown, just like that. And  
then your oven should be preheated at 425. They 
should sound and look like – that super crispy.  
Top them with your favorite sauce and cheese, bake 
them for about a half an hour at 425, and then  
broil them for about 2 minutes, really quickly, 
till they come out oozy, gooey, delicious. This  
is one of my favorite dishes. In the meantime, 
throw in your favorite tomato sauce, add your It’s  
Skinny angel hair, some more cheese, of course, 
please, and it should look like that. So good!
