Loaded potato skins! So delicious! Smaller potatoes would’ve been ideal but I used what I had! Boiled them in salted water until fork tender. While they’re boiling, get the toppings ready. Cream cheese mixed with grated broccoli and cheese. Fried bacon, then chop: Once potatoes are done, cut into three pieces use skin sides and I saved the middle for mashed potatoes (for another time). Onto a baking sheet brushed with olive oil and garlic Parmesan, smashed them and into an oven for 20 minutes at 400. Remove. Place cheese mixture onto potatoes and top with bacon. Return to oven for approximately 5-6 minutes. I served mine up with a French onion dip! Delicious!
