    500 g of all-purpose flour
    355 g of lukewarm water
    100 g of sourdough starter
    10 g of salt

    Mixed everything, did 3 folding at 30 min intervals, let the dough rise for a total of 5h30. Second proofing in fridge for about 18 h. Baked it ina covered dutchoven at 450 F for 20 min then another 20 min uncovered.
