while roasting this vegetable hole makes
for a great presentation it definitely
brings some challenges first we tried
roasting the Romanesco hole straight in
the oven in a similar way to our roast
broccoli we used a lower oven
temperature to give the interior a
chance to cook through we were excited
to see what came out of the oven even
when the outside was well browned the
inside was still underdone we tried a
variety of ways first we cooked it
covered in the oven using foil now this
worked but it took a long time and it
was kind of awkward next we try boiling
which washed out a little bit of the
flavor but the outside fettes were
overcooked before the stem had fully
cooked through so we realized we needed
a two-step process one with moist heat
to turn the dense stem tender a second
dry heat stage to give us the Browning
and the visual appeal that makes roasted
vegetables so good the best option we
found was the microwave it had the best
flavor the results were very similar to
oven steaming or conventional steaming

  1. I’d set them in a pot of water that rises just past the stem and do a quick steam then finish in the oven to brown the outside

  2. I don't own a microwave, and I never will. I prefer to separate the stem and pan roast the stem in butter and the florets blanched, then broil roasted with pork fat & finished with S/P.

  3. The easy way of boiling the romanescu is to cook it like cauliflower.

    Put it into a kette and cover in cold water from the spring. When the water is boiling (you can wait a minute), remove it to a platter. The residual heat will cook it so that it is ready for the broiler.

    This avoids overcooking.

  4. One time, my dad wrapped a whole head of cauliflower in foil and put it on the grill. He forgot about it for like an hour… When he unwrapped it, it was not totally burnt, but instead brown and caramelized and very very soft. He and 2 of my step sisters stood around it with forks, just going to town on it, while the other one watched in disgust (I wasn't there, but I was told the tale).
