Greek Meatballs with Mediterranean Quinoa

This was also my first Mediterranean diet meal I have made, and it was so good!

My turkey meatballs look burned, but they aren't lol. This was also my first time cooking with ground turkey.

I loved the quinoa salad! I ended up adding slightly more lemon juice than the recipe suggested and it was perfect. I cooked the quinoa in my rice cooker and it actually turned out ok. (I tried to make quinoa before and burned it on the stove πŸ˜‚)

I also just added a little hummus on the side instead of the feta mix the website suggested.

So, if you would like to let me know what you think or what your favorite Mediterranean diet meal or recipe is for me to try, please let me know!

(I don't like salmon, but am willing to maybe try again lol)

    Looks good. Also my friendly reminder that you don’t only have to eat Mediterranean foods too! Just about every cuisine is easy to adapt and stay on plan. Load up on veggies, legumes, whole grains and use olive oil to cook!
