    I need some of your honest feedback. I have been making bread for months now and feel like I am getting the hang of it but at the same time, I am doubting myself. The last photos are of the crumb so please make sure to look at those. My recipes are pretty much the same;ingredients500g bread flour50g starter10g salt375g water-mix water and starter together-add flour and salt-mix together until it becomes a shaggy mess-autolyse for 1 hour-stretch and folds (4-5 rounds, 30-1hr apart)-add my inclusions during the second/third stretch and folds-let the dough rise for a few hours at a warm temperature-let the dough bench rest for 15 minutes-final shape the dough, stitch the dough-dough in bannenton baskets-cold proof for 12 hours-preheat oven 500, turn oven down to 450, bake 30 minutes, lid on, bake another 20 minutes, lid off
