back here in the kitchen with Chef Frita
burnhard and we are cooking what is the
pasta that I can’t pronounce we’re
making butini
amatriciana bucatini amatriciana and
we’ve already got the Italian bacon but
what is it called it’s called Panetta so
petta it is the Italian version of bacon
so we just rendered it off to make it
nice and crispy okay just pouring a
little bit of that fat out we’re going
to keep some of it in there does it just
add flavor it does it adds a lot of
flavor so I’m going to add some of our
sauce that we make in house we use this
for a couple of our pasta dishes and you
can buy it uh in our Market next door so
this is Luca there a newish restaurant
in Homewood plus a market I did not know
that so this is this is exciting take it
to go so yeah we wanted to just feature
some of the stuff that you can buy um
it’s really affordable too we make our
fresh pasta in house so I can tell it’s
fresh pasta it’s all wound up and nice
yeah so these are our nests we sell like
several different shapes though that are
kind of hard to find in our normal
grocery stores okay so what I’m doing
right now is I’m dropping it in some
boiling salted water and the most
important thing you can do when you’re
cooking with fresh pastas give it a good
stir okay otherwise it’s going to stick
together and it’s not going to cook very
evenly cuz fresh pasta is already you
know tender yeah so we’re only going to
cook it for about 2 minutes okay so back
to my sauce here it’s coming along
pretty good I’m going to add a little
bit of butter that’s butter okay I
thought it was cheese okay yeah this is
some butter um so we’re just going to
add that and kind of swirl it around um
how how hot is that pan right now are
you cooking on medium I am about medium
okay so we’re just going to get this all
nice and uh stirred up kind of stirring
everything together and then what we’re
going to do is we’re going to when we
add this pasta we’re going to add a
little bit of the water okay not a lot
of people know this but when you’re
cooking pasta the pasta water is kind of
the secret ingredient that’s what makes
your pasta sauce super creamy is the
pasta water because what coming off of
the pasta into the water yeah it’s that
starch the starch so you want to kind of
add that and that’s what’s really going
to bring your sauce together okay yeah
so it’s kind of a nice little trick I’m
also going to add a little bit of
calabrian chilies uh cuz I like the
pasta a little bit spicy spicy yeah uh
so we’re going to just add that in there
like so um a little bit all of this
stuff you can get at our Market too okay
um so we’ve got a lot of um fun Italian
Goods um we have some of our dried pasta
too so we sell this sauce what I always
say is you can do a pound of fresh pasta
or 12 ounces of our dried pasta okay um
so it’s really fun because you can cook
all of the stuff for a family of four
for like $20 I’m so excited your pasta
is so affordable we have about 30
seconds before I go to break I’m excited
to this pasta water Tri cuz I don’t do
this oh yeah it’s a great so I’m just
going to I like to use this basket
instead of straining over the sink and
you to sprinkle it we just going to
sprinkle it and we’re just going to Stir
It Up get it all nice and what fun tool
to is that looks like tweezers these are
my tweezers are they like that’s like
they are and you can get them on Amazon
it’s my favorite kitchen
tool and it makes you look who would
ever need tweezer something I’m so
shocked right now okay well we’re
stirring this all up and I guess when we
come back we’re going to we’re going to
Plate it and we’re going to try it
awesome I love it all right we’ll be
