Ingredients

For the kofta stuffing
3 Tablespoons ghee plus more for forming the kababs
3 Tablespoons golden raisins
1 cup onions thinly sliced
vegetable oil as needed for greasing hands while stuffing the koftas.

For the kofta (meatballs)
1 pound ground chicken or beef, lamb
1 Tablespoon oil
1/2 cup breadcrumbs
1 cup onion minced
½ cup mint leaves minced
½ cup cilantro leaves minced plus more for garnish
1 egg large
2 Tablespoons garlic minced
2 Tablespoons ginger minced
1 Tablespoon fresh lemon juice
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon salt to taste
¼ teaspoon red chili flakes optional

For the sauce
1 1/2 cup onions 1 cup thinly sliced, 1/2 cup blended
1 cinnamon stick
4 cardamoms
4 cloves
1 Tablespoon garlic paste
1 Tablespoon ginger paste
1 teaspoon coriander
1 teaspoon cumin powder
1/2 cup yogurt
1/2 cup heavy cream
1/2 cup water as needed
6 green chilies
1 bouillon cube
1/2 teaspoon sugar
salt to taste

hi everyone welcome to clo and cumin
today we’re making Kofa Curry this super
simple recipe has just three steps one
make the Kofa or meatballs to make the
sauce and three put it all together
let’s begin add one lound of ground
chicken one cup of minced onion half a
cup each of breadcrumbs chopped cilantro
and mint 2 tbspoon each of minced ginger
and
garlic a teaspoon each of coriander
garam Masala cumin and
salt a tablespoon each of oil and fresh
lemon juice 1/4 teaspoon of crush red
pepper and one large
egg mix well cover and set aside
now let’s make the stuffing for the
kofas in a large pan melt 3 tbspoon of
ghee add a cup of onions and Fry till
light
brown then add 3 tbspoon of
raisins once you’re done scoop out the
fried raisins and fried onions and set
them aside we’ll be using the pan with
oil later
now let’s make the meatballs using an
ice cream scoop scoop out the kofta mix
and place each scoop on a clean
surface with oil greased hands take a
scoop of kofta mix and stuff it with
about a teaspoon of the fried onions and
raisins smooth the surface of the
meatball so that there are no cracks
continue until all the meatballs have
been stuffed don’t worry if you have
some fried onions and raisins left over
we can use that as a garnish for this
delicious
dish now lightly fry the kofas with the
leftover oil over medium heat turn
frequently for even
Browning place the fried kofas on a
plate remember not to put them on a
paper towel those juices will be added
later and have a ton of
Flavor now let’s make the sauce add a
little a little more oil to the pan if
needed add a stick of cinnamon four
cloves and four crushed cardamons add 1
and 1/2 cup of sliced
onions half a cup of Blended
onion a tablespoon each of garlic paste
and ginger paste a teaspoon each of
cumin and coriander
powder one bullan Cube and finally a
half a teaspoon of sugar simmer for a
few minutes now add a half cup of yogurt
and six green chilies cook for a few

minutes add half a cup of
water add the meatballs and any Rel
juices at the bottom of that
bowl drizzle with about 1/4 cup of heavy
cream mix and simmer and you’re
done garnish this delicious dish with
chopped cilantro and any leftover fried
onions and raisins that you might have I
