SMASHED POTATO SALAD
1Kg Baby Potatoes (boil then roast in the oven at 400 until crispy) – cool before adding sauce
1Cup Sour Cream
1/2 Cup Mayo
2 Cloves of Garlic
1 Tbsp Dill
1 Tbsp Parsley
1 Tbsp Green Onions

GINGER CARROT SALAD
Pickled Apricots
(1 cup dried apricots, 2 dried bay leaves, 1tsp coriander seeds, 1/2 cup orange blossom water, 1 tbsp sugar – heat sauce and pour over apricots letting steep for at least 20 min)

Dressing
3 Tbsp minced Shallots
3 Tbsp rice vinegar
Zest 1 orange
Pinch of Salt & Pepper
2 Tbsp Olive Oil
1 Tsp Ground Cinnamon

10 Carrots Grated
1/2 Cup toasted pistachios
1/2 tsp cinnamon sprinkled on top
1/3 cup fresh chopped mint

MEDITERRANEAN PASTA SALAD

12 oz Pasta – cooked and cooled
1 cup halved grape tomatoes
1 cup chopped cucumber
1/4 cup red onion
1 cup basil
1/2 cup pitted green olives
1/2 cup pitted black olives
1/2 cup feta cheese
salt and pepper
Dressing
1/2 cup olive oil
1/2 cup red wine vinegar
1 Clove of garlic minced
2 tsp Dijon mustard
2 tsp dried oregano
2 tsp thyme
1/2 tsp salt
1/4 tsp pepper

you know that that feeling of winter
ending and spring beginning the longing
for bright and crunchy Foods the craving
of something new it’s so interesting how
spring comes the weather begins to shift
and along with that your taste buds are
also ready for a change with the seasons
they’re ready to welcome in the
newness welcome to a Sunday afternoon
with the family last week everyone
headed home to celebrate Easter weekend
well mostly everyone we had a few people
that had to
work so for this particular Easter we
did something different than a
traditional Easter dinner we prepared
three salads ham and an apple tart with
apricot jam as a family we agreed that
we would be very happy if this was our
new traditional type of Easter dinner we
loved it so much these salads are very
versatile and they are great all
throughout the spring and summer they’re
full of herbs and bright flavors to help
bring out the changes in the
season so welcome to our family Easter
weekend we will take you along as we
prepare Sunday

dinner this crispy potato salad was a
fun new recipe for us and I would highly
recommend it for your next event it
would be great for a barbecue potluck or
even a picnic it’s a Twist on your
traditional potato salad after boiling
the potatoes you smash them down because
this is actually a crunchy smashed
potato salad and then you cook them in
the oven with some oil it helps if you
flip them halfway through and then cook
them again just so that they get that
really nice crispiness to
them
then you add in your variety of onions
and mayo and lots of dill and different
spices but the flavor from roast ing the
potatoes is really what defines this
salad and so definitely give it a try if
you’re looking for a new potato salad
recipe we were basically fighting over

next we have the ginger carrot salad
which has toasted spices pickled
apricots pistachios and herbs it’s full
of crunch and unique flavors and I can
guarantee it’s a treat for the
senses
it’s super simple and an excellent way
to use up any bags of carrots you might
have lying around we still have some
carrots from last year’s Garden so we’re
using them up in this fun and
interesting way one tip if you’re
serving a carrot salad try to get salt
or the dressing on the carrots ahead of
time so that the salt can begin to break
down the carrots prior to serving which
will just make it more enjoyable to
eat we will have all the recipe

made ahead of time or the day before

both red and green apples for a
combination of flavors and to keep
things simple we just bought the pastry
dough and then we used our preserved
apricot jam as both the base and
drizzled on top you could use any flavor
of jam for this and it would work really
