Decided to try something different and make some meal prep options for my 2yo son. He’s obsessed with meatballs and butter chicken so I figured i would make a batch of each instead of using store bought frozen meals. These recipes made about 10 each (20 total) with some left overs depending on portion size.

*I eyeballed a lot of the ingredients for the meatballs so don’t have exact measurements. Also butter chicken not exactly done traditionally but still slaps

Meatballs:
500g beef mince
Garlic powder
Onion powder
Dried oregano
Salt and pepper

Pasta and sauce:
Macaroni
Very small amount of garlic
800g crushed tomatoes
Dried basil (can use fresh if you want)
1 tsp sugar

Rolled up the meatballs into small balls (got about 30 out of the 500g. Cooked in pan until browned off, removed and rested. Pasta in (cook to packet instructions). Garlic in, sautee for a minute, add tomato, basil, sugar, salt and pepper. Mix and bring to boil, heat down and simmer for 10 mins until reduced. Add meat balls to sauce to coat them, remove and set aside. Add cooked pasta to sauce and mix together. Portion out into small containers.

Butter chicken:
2 chicken breast
50g unsalted butter or ghee
2 large onions
Minced garlic
Minced ginger
2 Tsp ground cumin
2 Tsp ground coriander
800g crushed tomato
60mL water
2 1/2 Tsp garam masala
2 1/2 Tsp sugar
1 cup Greek yoghurt of thickened cream
Rice

Rice in rice cooker, easy done. Onions peeled and sliced thinly into strips. Chicken breasts poached for about 12 minutes or until cooked through. Butter in a high rimmed pan, onions in, cook for 15 mins until soft. Garlic and ginger in. Cumin and coriander in. Crushed tomato and water in, mix and bring to boil. Reduce heat and simmer for 10 mins. Blend with an immersion blender (if you don’t have one you can use a regular blender just make sure the sauce has cooled before you do it!!) Once blended, back on the heat, add garam masala, sugar and yogurt/cream and mix. Bring to boil again, reduce heat and let cook for 30-45 mins. Portion. Can either add chicken to sauce and mix together or add separately.
