recipe scaled down for 4 bagels instead of 8
i followed most of the instructions to the T, but I cold proofed for ~24hrs instead of overnight because i couldn't find the time to shape and bake. the dough was pretty stiff coming out of the fridge and it was a little difficult to shape (i stretched the dough into logs and twisted the ends together instead of making a ball and poking a hole through), but it looks like they came out nicely.
