Are these the vegetables sprouting? If they aren’t cut do they just turn into a big plant?

They’ll turn like the ones you see in the right, you can start harvesting them now cause the roots are probably pretty good by now, they keep popping out for like 30years

Those are the stalks. If you don’t cut/pull them, they will grow into fronds. If you over harvest your asparagus, the fronds won’t be able to generate enough energy to set nice asparagus next year.
That plant looks pretty healthy to me. I’d be picking those.

It’s a plant that dumps energy into the crown(root). You harvest some, then let the rest grow into a large fern/dill type thing. Search for mature asparagus plant.
