Sunday Pork Roast

    # Ingredients

    * 3 to 5 pound pork shoulder or pork butt roast
    * 2 tbsp vegetable oil
    * 4 tbsp [pork roast seasoning](https://www.lowcarbspark.com/pork-roast-seasoning/)
    * 1 cup water or broth if needed

    # Vegetables

    * 2 large onions
    * 3 large carrots
    * 3 large turnips or potatoes
    * 4 celery ribs
    * 1 1/2 tsp [Italian Seasoning](https://www.lowcarbspark.com/italian-seasoning/)
    * 1 sprig of fresh rosemary
    * salt and pepper to taste

    # Instructions

    1. Preheat oven to 450°F/232°C.
    2. Mix oil and seasoning, rub onto pork.
    3. Roast at 450°F (232°C) for 40 mins.
    4. Cut and season vegetables, place around roast with rosemary.
    5. Reduce heat to 350°F (180°C).
    6. Roast until internal temp reaches 160-170°F (71-77°C).
    7. Rest for 10 mins.
    8. Serve with vegetables. Enjoy Sunday dinner!
