Introducing my BAKED CHEESY SHELLS!

Think lasagna, but made with cute little shells!

Layers of chewy pasta, gooey cheese and the most amazing turkey tomato sauce you’ve ever tasted! All baked to the perfect, bubbly, golden brown goodness, complete with those fabulous crispy cheese edges.

In a word: perfection.

We both took one bite, and it was clear: this was the best meal I’d ever made.

And the most amazing thing is that it is 100% Specific Carbohydrate Diet legal, gluten free, and HIGH PROTEIN.

Each serving has 72 GRAMS OF PROTEIN!!

That’s because this recipe utilized lentil pasta — from Wellbee’s…which is the only brand of Specific Carb Diet legal lentil pasta…because they take the time to soak the lentils for 24 hours BEFORE they turn it into pasta!

And let me tell you — this was decadently good!

And the cheese we used? MUNSTER CHEESE! Straight from the block. From grass-fed cows. And then finished with Parmesan cheese — which does a really terrific job of browning up 🙂

Here’s What You Need: (Serves 4)

Sauce:
1/2 lb cooked ground turkey (I used half of the 1 lb batch I cooked the day before)
1 red bell pepper, diced
1 red onion, diced
5 garlic cloves
2 tomatoes
1 can organic diced tomatoes (SCD: make sure the ONLY ingredients are tomatoes and sea salt!) This is the brand I use: https://amzn.to/3xIDFk7
1 tsp garlic powder
1 tsp onion powder
1 Tbsp Italian seasoning
Pinch of red pepper flakes
Salt and pepper to taste

3 cups lentil pasta shells (SCD use the Wellbee’s brand: https://www.wellbees.com/wellbee-s-lentil-pasta.html )

1 block munster cheese, grated (this brand is grass-fed : https://amzn.to/3UjP8j0
1 cup Parmesan cheese, grated fresh from the block

Tools:
Vitamix or high powered blender: https://amzn.to/4aEsSG6
Bread pan or casserole dish
Nonstick tinfoil
Cheese grater
Large nonstick skillet or dutch oven

Directions:
In a large skillet or dutch oven, saute your bell pepper, onion, garlic and tomatoes in 3 Tbsp EVOO with salt and pepper for about 5 minutes over medium high heat. Add your spices and your diced tomatoes and cook for 2 more minutes. Transfer to your Vitamix blender, and blend on the soup setting (should be about 5 minutes) until it is velvety and smooth!

While it’s blending, add your cooked turkey to the same dutch oven, and warm through over low heat.

When the sauce is finished blending, add back to the dutch oven with the turkey. Stir and set aside until it’s ready to be assembled.

Meanwhile, grate your cheeses. (This will take a few minutes, but grating it from the block really makes a huge difference and really makes it melt SO BEAUTIFULLY, versus the pre-shredded variety.

Lastly, cook your pasta until al dante. The Wellbee’s brand is supposed to cook for 7.5 minutes — I cooked it for six. Drain and set aside.

To assemble:
Brush the bottom of your bread or casserole dish with olive oil and spoon a little bit of sauce in the bottom to prevent sticking.

Then, add half of your pasta shells to the pan, followed by 1/2 of your sauce and half of the munster cheese. Repeat the layers. Finish off with your parmesan cheese on the top.

*Protip: you will need to “smoosh” the shells and everything down a bit with the back of a spatula. It will be FULL – but don’t fear: we’re going to bake it on top of a baking sheet in case it bubbles over, but mine didn’t!

Bake uncovered on top of a cookie sheet for 15 minutes in a 400 degree oven until the top is bubbly and has turned a beautiful golden brown.

Let stand for about 5 minutes to set before cutting into it!

Serve with a salad and a roasted vegetable! (I made broccoli and it was the perfect hearty accompaniment!

Leftovers will last up to 3 days in the fridge! (Protip: I saved about 1/4 cup of sauce to “refresh” the leftovers when I reheated them in the oven — and it really was extra delicious!

pregnant now and I just made the most
delicious dinner last night it was baked
shells with all this gooey delicious
cheese oh my gosh it was the best meal
that I have ever made and that is saying
something because I have made some
really delicious meals but this one was
so good it deserves its own YouTube
video it is 100% specific carbohydrate
diet friendly which is hard to believe
because it’s pasta It’s gooey cheese
it’s this Rich delicious tomato sauce it
is also glutenfree one serving of this
pasta dish has 72 g of protein that is
because it’s made with lentil pasta and
it’s got ground turkey in it and all of
that
cheese oh my gosh it is so so good so
without further Ado here’s how you make
it enjoy so part of what makes this
recipe so delicious is the sauce this is
my go-to tomato sauce I make it at least
once a week it is Chuck full of veggies
and so good and please bear with me
through this blurry footage for the next
15 seconds this is archived footage
because I didn’t record it this last
time anyway it’s one red bell pepper one
red onion five cloves of garlic two red
ripe Tomatoes a bunch of spices that I
will list below and one can of diced
tomatoes and then you’re going to put
that in a Vitamix or high powered
blender and blend it on the soup setting
which will take about 5 minutes and it
will become so velvety smooth M just
look at that I added it to some ground
turkey but you can also use ground beef
or ground pork it is totally up to you
and now it is time to assemble so you
are going to want to put some olive oil
in the bottom of a pan I used a bread
tin because that’s what I had and then
put a little bit of sauce and then your
pasta I used half the pasta and these
are soaked lentil pasta shells from
wellb they are the only specific carb
diet brand pasta that is out there that
I can find and believe me I have looked
I will put a link in the description
then you’re going to want to put half of
the sauce and we are going to layer this
just like lasagna so a layer of noodles
a layer of sauce and then a layer of
cheese okay let’s talk cheese this is
monster cheese grass-fed monster cheese
it is specific carb diet friendly and
you are going to want to get a block of
the cheese and then grate it yourself
not only does it make this melt so
beautifully but it just it’s more
costeffective too you’re going to go
back in now with the pasta and folks we
are getting dangerously full here but
have no fear because we’re going to bake
this on another baking sheet so in case
it does overflow there will be no mess
in the oven but the beautiful thing
about using shells is that you can kind
of like squish them down a little bit
and this is where the Finesse comes in
people this is the skill here we are
going to do our best to get as as much
sauce and as many noodles in this little
tin as possible and we’re just going to
kind of Squish it all down they will
conform because they are shells and
they’ll just kind
of shell together finally we’re going to
top it with more monster cheese and we
are also going to put some freshly
grated parmesano regano and here’s a pro
tip you’re going to want to make sure
you get the cheese to the edges because
everybody knows
that those Crispy Crunchy baked cheese
Edge pieces are the best so get it all
on there every last little bit and then
we are going to bake it in a 400° oven
for about 15 minutes you see everything
is already all cooked in here so really
we are just melting the cheese and here
is the hard part
waiting and when it comes out of the
oven oh my gosh it is so bubbly and the
parmesan does such a great job of
Browning up and it smelled so fabulous
it smelled like your Italian donut and
just look at those crispy edges that’s
the money piece baby so a pro tip here
is that before you cut into it you are
going to want to wait for about 5
minutes just so that the cheese sets a
little bit and it’s easier to take out
of the pan and let me tell you look at
that cheese because we layered it like a
lasagna it’s got cheese running
throughout so you’re not just getting
the cheese on the top which yes is so
photogenic and gorgeous and oooing and
eyeing and that’s what people see but
it’s the cheese in the middle that
really makes it so fabulous because you
just get these like hunks of cheese with
the pasta oh my gosh this was truly one
one of the best meals that I have ever
made I mean the pasta look at that
cheese look at that cheese pole people
it’s hard to believe that this is on the
specific carbohydrate diet cuz this is
the comfiest of comfort
food we will be making this again
probably this weekend I have to get all
the ingredients but it deserves a happy
dance so there you have it sports fans I
hope that you enjoyed it I hope that you
make it and I hope that you like love it
as much as we did I’m already planning
on making it again next time I would
definitely line the little bread pan
that I used it with with like non-stick
tin foil because it would make cleanup a
little bit easier also we had leftovers
for the next day which was amazing so
the specific carbohydrate diet for those
that are interested is for Crohn’s
disease ulcerative citis which is what I
had I was diagnosed 16 years ago and
because of this amazing Di diet I have
kept it in remission symptom and
medication free for 16 years almost now
so it has definitely been a lifesaver
for me I was on bed rest for 11
months and then I found this diet and it
changed my life like
