    800g unbleached AP
    200g KA WW
    670g water
    18g sea salt
    215g fed starter

    60 min fermentalyse
    Added salt and folded in thoroughly
    60 min rest
    Stretch/fold
    60 min rest
    Stretch/fold
    60 min rest
    Stretch/fold
    60 min rest
    Stretch/fold
    2.5 hr min fermentation
    Pre-shape
    30 min bench rest
    Final shape, proof basket, overnight cold retard (or 5 days whichever makes you happy)

    Preheat oven and baker to 500
    Score while cold
    Threw 16 oz Mason jar of ice and water on pan for steam
    Bake covered 45 min @450
    Bake uncovered 15 min @450

    Looks amazing. I’m curious about the back time though as all the recipes I’ve used bake anywhere from 20-30 mins with the lid on and 15-20 with it off. I can’t understand how you could cook it for 45 mins lid on at 500 without it being overcooked? Was that a typo?
