Best loaf so far ๐Ÿ˜ tried using unfed starter to see how that would go. Think it will be my way to go from now on! Its so soft and fluffy!!! Just wish it had more of a sour taste to it.

Ingredients
– 100 g unfed sour dough starter
– 310 g warm water
– 500 g plain flour
– 12 g salt

  • mix water and starter togehter
  • add salt and flour and mix to a shaggy dough and wait an hour.
  • 1st set stretch and folds. Rest an hour
  • 2nd set stretch and folds rest 45 mins
  • 3rd set coil folds rest 45 mins
    -4th set coil folds bulk ferment for another 4.5 hours

-laminate and roll and shape and place in the fridge over night
-preheat dutch oven at 200 for an hour
– bake bread at 200 for 35 minutes covered,with 2 ice cubes at the bottom.
-take lid off and bake for another 20-30 minutes until crust is to your liking.
– remove from dutch oven and allow to cool
