🛒INGREDIENTS: (serves 6 – 8)
1 pound pork sausage (or sausage of your choice)
1 – 2 cups fresh baby belle mushrooms, sliced
¼ cup red bell pepper
8 large eggs
2 Tbs. Milk or cream, optional
3 – 4 cups baby spinach, stems removed
Dash red pepper flakes, optional
Dash cayenne, optional
½ tsp. salt
¼ tsp. pepper
1 ½ sharp cheddar cheese, grated
1 cup cups mozzarella cheese, grated
½ cup feta, crumbled
Slab of butter (to butter the casserole dish)
¼ cup scallions, chopped for garnish
¼ fresh tomatoes, chopped

am making a three cheese
frittata so in our three cheese frittata
our cheeses are cheddar feta and
mozzarella for our protein we have
eggs and pork sausage of course you can
use whatever sausage you like if you
don’t want pork you can have turkey
whatever you like for vegetables we have
baby
spinach baby bella
mushrooms some chives for
garnish and red bell
pepper and the ingredients will be
listed along with their measurements in
the description so let’s get to cooking
so I’m going to scramble the eggs
up we have eight eggs
here we
add the

milk then we’re going to add some salt
half a teaspoon because of the feta then
pepper I’m going to combine my cheeses
in here so I’m going to to
start with the
cheddar the
[Music]
mozzarella and then the
feta I’m going to turn my attention over
to the
sausage BR the sausage on medium heat to
avoid burning it you do not have to use
oil because the sausage will render its
fat as it
Cooks if you want Spice add some pepper
flakes and cayenne both are
[Music]
optional add the mushrooms to slightly
[Music]
Brown add the diced red bell pepper
because it adds another layer of flavor
and the pop of color is
[Music]
nice add the spinach a little at a time
it looks like a lot but it will Wilt
down trust

me add the last batch of
[Music]
spinach again we’re just barely cooking
everything staying at this point because
it will go in the
[Music]
oven so colorful isn’t
it transfer to a buttered casserole
[Music]
dish add the egg and cheese mixture then
mix it in so it’s spread
[Music]
evenly bake at
375° fhe approximately 20 25 minutes
until it’s bubbly and the center is not
loose but on the firm side spinach is a
leafy vegetable popular worldwide with
powerful nutrients that include
anti-carcinogenic properties
rich in
catenoids vitamins a for our immunity B
to improve our energy and nervous system
conditions and vitamin C for our skin
it’s been about 20 minutes and time to
check the casserole yeah it’s ready the
bubbling in the center appears to be
pretty firm it will continue to firm up
as it cools wait to serve it until it’s
completely cooled
off it’s cooled off now after about 20
minutes so I’m going to top with a fresh
ch chopped tomatoes and scallions you’ll
want to add the tomatoes and scallions
just before serving if you’re placing in
the fridge for later wait to add the
toppings until it’s time to

it is so good I can taste all the
cheeses and the sausage and um spinach
together with the
mushrooms
M the wonderful thing about this
dish is it only takes a little bit it’s
pretty rich and it will keep you full
because of all the protein in it and of
course we have our fresh ingredients as
well or
tomato on top that is optional but it
does add a nice freshness to it now I
would recommend doing that only if
you’re serving it immediately if you’re
serving it for tomorrow or something
then just wait before you serve it to
add the tomatoes on
top
