A tomato pie is the signature pizza of New Haven, CT. This is the style of pizza that was brought from Italy to the area many years ago. If you wanted a regular cheese pizza, you would ask for a tomato pie with mozarella (or mootz); otherwise, this is the regular pizza you would get. The crust on my rendition was crunchy and airy with a nice chew, the sauce is my homemade, New Haven inspired pizza sauce, and true to form, I used freshly grated peccorino romano that adds a nice tang and sharpness to balance and compliment the bright, flavorful sauce just perfectly — and can't forget the EVOO. This was a tasty, Thursday treat.
