This baked goat cheese pasta is an easy and creamy pasta that is made with spinach, mushrooms, cherry tomatoes, goat cheese, balsamic vinegar, olive oil, and spices. This whole dish can be made in under an hour, and it’s beyond delicious!

INGREDIENTS

Before you start to make this goat cheese pasta recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

250g Pasta
⅓ cup Olive oil
300 g Cherry tomatoes
100 g Mushrooms
1 cup spinach
100 g Goat cheese
1 teaspoon Chili flakes
1 teaspoon salt
1 teaspoon Black pepper
2 teaspoon provencal herbs
2 tablespoon Balsamic vinegar
1-2 Garlic cloves

INSTRUCTIONS

Preheat the oven to 200° Add the cherry tomatoes, mushrooms, spinach, and garlic to an oven-friendly baking dish.

Toss the cherry tomatoes, mushrooms, garlic, and spinach with balsamic vinegar, olive oil, chilli flakes , thyme , rosema and oregano.

Bake in a preheated oven for 20-25 minutes or until the tomatoes are cooked through and goat cheese is softened.

Cook the pasta with a tablespoon of kosher salt. Wash it with cold water to prevent it from overcooking and set it aside.

Remove the baking dish from the oven and mash the goat cheese, then mix it with the tomatoes until a creamy goat cheese pasta sauce forms.

Add the fresh spinach or basil and the cooked pasta, and mix well.
Serve hot as a vegetarian dinner or as a side dish next to your favorite protein!

STORING

Store this pasta dish in the fridge. Cover it with a plastic wrap tightly or place it in an airtight container for up to 3 days.

FREEZING

If you would like to freeze this pasta dish, you totally can! Simply make it according to the instructions, let it cool to room temperature, and either place it in an airtight container or cover it with plastic wrap.
Freeze for up to 2 months. Make sure that you are using a freezer-friendly container to keep it fresh.

REHEATING

Reheat this pasta dish either in the microwave in small portions or the whole dish in a 180c (350f) preheated oven for about 8-10 minutes or until the cheese is bubbly.

SERVING TIPS

Serve this pasta next to air fryer garlic bread and my bruschetta with mozzarella. This makes the most delicious and satisfying dinner.

SUBSTITUTIONS

Pasta kinds- You can use any kind of your favorite pasta kinds and pasta shapes, like chickpea pasta, brown rice pasta, spinach pasta, quinoa pasta, etc.

Vegan- It is very easy to make this recipe vegan, simply replace the goat cheese with vegan goat cheese.
