Otherwise, my go-tos are DL Jardine’s Texas Champagne or Pepper Plant’s California Style (also known as Trader Joe’s Roasted Jalapeno).

First, throw that thing in the trash. Second, preheat a nonstick 8-10in pan for 2 minutes on slightly under medium heat. Third, whisk two eggs using a fork for about 30 seconds. Spray some olive oil spray into the pan and pour in eggs. Fourth, while the eggs are setting, sprinkle Rotel canned tomatoes and chilies onto the side that you’re not going to flip the other side onto (will depend on your dominant hand). Fifth, spread a liberal amount of Mexican blend finely shredded cheese over the tomatoes. Sixth, add drops of Torchbearer Garlic Reaper to taste over the shredded cheese. Seventh, the egg should still be a little runny at this point, but firm enough on the bottom to flip the plain side over the side with the fillings. After flipping, let cook for about 45 seconds. Flip the whole omelette and cook for 45 more seconds. Plate and add your favorite salsa.
