Been learning to cook steak properly and this is one of my first I’m happy with on the cast iron! Beautiful cut , can’t remember the name.

Any tips for cast iron appreciated. What seemed to work was coating the pan in a light layer of avocado oil searing on high heat, flipping and turning to medium/high and waiting until the last minute to add the butter. My last few smoked so much it set off my smoke alarm hence the Avo oil and turning heat down 🙂

    Add some garlic and a diced shallot when you throw in the butter. Maybe some thyme too
